Chicken Nuggets

Did you think chicken nuggets had to be out of your life for good since starting a specialty diet?? Well we have a recipe which is pretty darn delicious (thanks to a brilliant customer who got the ball rolling on the Keto Panko recipe)! Give it a try and let us know what you think!

Ingredients:

2 lbs Chicken (thighs or breast, deboned, sliced)
1 pack of Keto Panko Crumbs or Zesty Panko Crumbs
3 eggs, beaten
4 oz yogurt, thinned with water to a buttermilk consistency (thick)

Directions:

1. Pour the Keto Panko Crumbs or Zesty Panko Crumbs into a shallow plate.
2. Pour Yogurt-milk into a medium sized bowl and beaten eggs into another medium in sized bowl. 
3. Preheat oven to 425 degrees.
4. Place a cooling rack inside the baking tray/pan you are going to use.
5. Dip sliced chicken into yogurt-milk, drip dry, dip in beaten eggs, drip dry and dredge into keto panko.
6. Place on prepared tray.
7. Lightly spray chicken nuggets with Extra Virgin Olive Oil.
8. Bake in oven for 15-20 min.
9. Serve with Liberated Ketchup or Pizza Pasta Sauce!
