Copycat Starbucks Egg Bites - SCD Compliant

Are you like me and hate to admit that you might have a slight addiction to Starbucks's fluffy savory, melt in your mouth sous vide egg bites?
My girl is no exception and has begged for me to break down and buy a sous vide appliance to replicate this newfound coffeehouse delight. Needless to say I have a problem caving in to her food fantasies and did about a year ago 😒. I made them (yes, it took several hours) and they were delicious, but who in the world has that much time to dedicate to breakfast?! Not judging but I have major envy if you do.
Just as I’d chalked it up to impossible, my hubs and kiddos got me an InstantPot for my birthday. And yes, I use this baby ALL THE TIME. I hemmed and hawed over whether or not to ask for one for at least 2 years, but it’s been the best small kitchen appliance I’ve purchased since the stand mixer. It keeps my kitchen cool in the summer and doesn’t judge me for procrastinating.
This week I found myself on Pinterest and discovered there are several of us out there that likely need a self-help group for egg bite addictions. I’m happy to say that the recipe I settled on was due to all the comments—it really was impossible to mess up.
This morning my girl enjoyed her very own momma made Egg Bites in less than a half an hour from start to finish. And the best thing...it made 14 so there’s plenty to enjoy the rest of the week 😉

Recipe:
4 eggs
227g (8oz) cubed Aged Cheese (I used Kerrygold’s Dubliner)
1/4 cup SCD Yogurt
1/2 cup or 1/2 package (110g) DCC (I use this
brand)
3oz (85g) Uncured, Ham slices (but you can use pre-cooked crumbled bacon 🥓 too!)
SCD ham
