White Chicken Chili Recipe

Yields: 4 servings


1 - 1 1/5 pounds Chicken, cubed (skin removed)

1 Medium Yellow Onion, diced

1 1/2 tsp. Garlic Powder (be sure ingredients are single and don't include flow or anti-caking agents)

1 T. Organic Extra Virgin Olive Oil

2-3 Cups White Haricot Beans, Soaked and Rinsed* (keep these prepared and frozen for quick dinner nights)

2 Cups Water 

1/2 Cup Green Verde Salsa

1 tsp. Sea Salt

1 tsp. Cumin, ground

1 tsp Oregano

1/2 tsp. Black Pepper, fresh ground

In a large pot, place all ingredients but the chicken and bring to a boil until onions and pepper are soft. Turn to simmer. Add chicken and cook on a low simmer for 45-1 hr. checking the firmness of beans periodically.  You want them to be tender.
*SCD Bean Prep: Prepare beans according to SCD guidelines to release the starches and make them easier to digest. We boiled, rinsed and soaked our beans for this recipe for 12 hours in the fridge. Drain and Rinse beans again before using in recipe. We learned this technique from SCD* Recipe here
